Chicken & Broccoli

I worked this weekend so dinners become tough when I'm gone all day! But thank goodness for a crock pot and a sweet husband! Nate put the chicken in and let it sit for about 4 hours. Then when I got home I cooked the broccoli, added the cheese, and cream of mushroom soup. Pop it in the oven for 30 minutes at 350 and bam dinner made! It was super easy, not the quickest dinner especially when you are hungry lol but it was easy so that made up for it! Link below! Enjoy!

Easy Italian Chicken Bake

Tonight we had Easy Italian chicken bake! The hardest part of this meal was smelling how tasty it was as it baked. It was torture! And oh it was so worth the wait! I was a bit hesitant having pesto on it but I am glad I did it because it was delicious!  Try it out for yourselves, seriously super easy! 4 ingredients!

Apple crumble & caramel cheesecake

Now I have to admit that the cheesecake was bought for this dessert but could easily be made from this recipe on here! I did make the topping which I was shocked was surprisingly super easy! I took it to my Relief Society (church function) and it was a hit!
So the recipe is for cheesecake bars, the actual photo on here didn't have a link on it so I just used the bars recipe and it worked fine! I didn't coat the caramel on like in the picture for the bars, I drizzled it on! Enjoy!

Grilled turkey and cheese lettuce wraps

Tonight we had grilled turkey and cheese with pineapple lettuce wraps. Super easy and healthy too! We used the griddle to grill turkey and pineapple (separately). Then added cheese on top of the turkey. Once grilled to liking we took it off and set it in lettuce and wrapped and enjoyed!

Jaxson's Birthday Party

Saturday afternoon after the race we had a party for Jaxson. He got lots of cool Legos, super hero outfits, and a cool race track. Papa pop (aka my dad) helped the kids out it together, or should I say they helped him lol. It was hilarious watching him! Fun afternoon! Happy Birthday Jaxson!

Jaxson's run

Today my family participated in a run to raise money/awareness for Autism. My nephew Jaxson has a former Autism so for his birthday this weekend we decided to do this as a family. Jaxson and Brooklyn ran (with the help of their parents) the mile run. Then us adults ran either a 5k or 10k. I had set a goal to run the 10k without stopping. I finished my race in 1 hour and 5 minutes, running the ENTIRE time :) We love you Jaxson!

Dinner out to the Habit

Tonight we went and saw Breanna's new office and then went out to a hamburger joint called the Habit! I got the original hamburger with sweet potato fries! Super tasty and great company! Thanks Dave and Breanna for hanging out with us!

Ham & cheese roll ups

Tonight we had ham & cheese roll ups with green beans as a side! It was quick yet tasty!  You take crescent rolls (I used great value brand), sliced turkey (or meat of your choice), and shredded cheese.  Lay out the roll, fold the meat slice in half and add some shredded cheese to the middle of it. Then roll up as normal. Stick in oVenice at 350 degrees for 15 minutes. You can keep them in for longer if you like them a bit darker. If you want, you can mix some veggies in it too. Nate had asked for some broccoli but sadly we didn't have it. But it is an idea for future times! While they cooked I made some green beans to go as a side dish. Enjoy! -The Schott's

Tonight for dinner we attempted a new recipe. It was a little different using nacho chips on crescent rolls but it was actually really tasty!

Flash back to the 80's

We had the chance to dress up for Halloween at work but since I still needed to wear my scrubs I decided to go with a little flash back to the 80's as my costume. You can't really notice it in this picture (taken at 6 a.m. before headed to work so I look dead tired) but I had TONS of make up on (at least for me it was a ton)! But everyone seemed to like it so I will say even though I was not born/nor raised in the 80's my costume was a success! Thank you Google images for giving me some ideas lol!

Pumpkin carving Halloween 2014

Tonight we (Nate) carved our pumpkin! We decided to keep it simple and do an "S" for Schott (we are creative huh ;p). It was quite the ordeal lol, we had previously bought a pumpkin just a few days earlier but we must have chose a bad one because it molded before we could carve it. So I went and got this cute little one! Nate did such a great job with the carving!
